New weekend breakfast – gluten & dairy-free banana pancakes! So easy to make and actually quite healthy! Just mash a banana, stir in a whole egg, add some shredded coconut and maybe some peanut butter, then fry in coconut oil or butter. I usually serve with berries & maple syrup. The boys were at football practice this morning, I’m grocery shopping for brunch with friends tomorrow. Also looking forward to dinner at Sylvia & Fredrik’s tonight… Happy weekend everyone!
